It all started in 1985 with a small group of patients at the Cleveland Clinic. After Dr. Esselstyn and his wife Ann adopted a plant-based diet, cutting out oil, meat, fish, fowl and dairy products, he launched a study to examine cholesterol levels and heart disease.
